Honey and Carrot Muffins
I had some carrots that I bought for the dumplings that I never used, so I made muffins.  I learned my lesson for improvising during baking, but of course was missing a few things and couldn’t find the measuring cup for the life of me.  This time, it actually came out.  Modified from this recipe.
Ingredients:
2 1/2 cups plain flour 
1 tsp baking powder
1 tsp baking soda
1/2 teaspoon cinnamon and nutmeg
1/2 cup firmly packed brown sugar 
2 cups grated carrot
1/4 cup honey 
2 eggs, lightly beaten 
1 cup greek yogurt
1/4 cup milk
1/3 cup vegetable oil
A shot of whiskey
Mix the ingredients and put them in greased and floured muffin tin.  Bake at 200C / 375F for about 25 minutes, until a skewer comes out clean.
