Smoked Salmon Breakfast Tacos
Ok, ok. The only thing that makes this a taco is the tortilla. But I had eaten all the “taco” the night before and this was what was left.
Ingredients:
- Scrambled eggs (check out how to make them really fluffy!)
- Smoked salmon
- Spinach
- 1/2 cup low fat Greek yogurt
- 3 tbsp chopped fresh sage
- Juice of half a lemon
- Salt and pepper
- Tortillas
For the sauce, simply mix the yogurt, lemon, and sage, seasoning with salt and pepper then set aside. Serve on the rest of the ingredients, in a tortilla.
