Borlotti Bean, Ricotta and Mushroom Bruschetta
Ingredients:
- 3 slices of bread
- 1/2 cup ricotta
- 1/2 can borlotti beans, drained
- 1 chili, diced
- 1 clove of garlic, diced
- 1 mushroom, diced
- 6-7 leaves of diced sage
- Juice of 1/2 a lime
- Olive oil and salt
In a bit of oil, saute the chili, garlic, mushroom and sage. Top bread with the ricotta, mushroom mixture, and borlotti beans. Drizzle with olive oil, season with salt, and bake for 10 minutes. Sprinkle lime juice over the top and serve.
