Black Bean, Salsa and Egg Breakfast
I had leftovers from the night before I wanted to use, so I piled this all into a pan and baked for about 15 minutes.
The fresh salsa is just chopped tomato, spring onion, coriander and lime. Put that on top of a can of black beans (or leftover ones), crack a couple eggs on top, and bake. Add on some avocado and rocket to finish off.
