Smoked Sage Trout with Roasted Witlof, Asparagus and Green Olives
I bought a smoke box for the grill, which will surely be awesome at some point… but this didn’t quite work. I covered the fish in lemon, sage, garlic and olive oil to marinade, and then grilled for about 5 minutes on each side with the smoke box in there, and then pulled it apart to put on top of some witlof and asparagus I had under the broiler in the oven for about 15 minutes on high heat. Top with green olives and a bit of lemon. I’ll figure this one out and post a legit recipe at some point, but remove the smoke box from the equation and that’ll probably do it.
